Chicken Florentine & Baked Apple Surprise
Chicken Florentine 100g chicken breast 1 tsp chicken broth 1 tsp chopped garlic 1 tsp chopped parsley 4.5 oz spinach Pound chicken breast to flat (a ziplock bag is ideal). Mix next 3 ingredients and brush onto flattened chicken breast. Lay spinach atop brushed chicken breast until covered. Roll chicken up tight. Lay onto baking sheet with seam side down. Bake at 350° for 15-20 minutes. Serve with the rest of the spinach, either steamed, sautéed or as a salad. Baked Apple Surprise 1 medium apple, sliced then diced your choice of liquid flavoring (I like butter rum and dulce de leche) Fill muffin tins with 1 tbsp liquid flavoring, then with chopped apples. Bake at 350 for 20-30 minutes depending on how soft you’d like your apples.
