Thanks, honey. You inspired me to make my own pasta. One question is how long should I let the pasta dry after the final rolling? All the cookbooks I read suggest to let the pasta dry for at least a couple of hours before cooking it .
with fresh pasta, the color does get a little lighter, whiter – but it also floats to the surface and fluffs up a bit – you need to be careful because it cooks so fast, also serve it relatively quickly because it does get sticky and gooey if you wait to long
In the video you said when you were draining the pasta that it was definitely done. How can you tell that it’s done? Is there a color changeor a change in firmness?

This was an awesome recipe. I have never made pasta by hand until your video and it came out great on my first try!
